Ottoman Bean Dip
I tried to recreate a dip I tasted and loved at the Ottoman restaurant in West End Brisbane.
While it tastes a little different, it’s just delicious . We dip fresh vegies and toasted Turkish bread into it. YUM was the family response. It’s really easy too, all in the blender together and it’s ready in a couple of minutes. You can also use home grown and dried beans, or buy dried beans and cook them yourself. Use lima beans or similar white beans and use 1 ½ cups of these.)
Ingredients:
1x 375 gm can cooked white beans, drained and rinsed.
Juice of 1 lemon
4 sprigs mint
½ teaspoon Sumac (a red, citrusy, peppery spice often used in Moroccan cooking )
¼ cup parsley
Throw all the ingredients into a blender or food processor.
Whizz til pretty smooth. Tip into a bowl and serve.
It’s even better the next day when chilled!
