
Linda's Lemon Myrtle Cordial
Linda’s Lemon myrtle cordial
Ingredients:
1 cup lemon juice or a combination of lemon and lime juice
4 cups water
2 cups white sugar
A piece of lemon rind about the size of a tablespoon, pith removed
1 teaspoon citric acid
1 ½ cups fresh, young lemon myrtle leaves thoroughly washed
Combine all of the ingredients except the lemon myrtle leaves in a large saucepan.
Bring to the boil and simmer 3 minutes.
Remove from heat and add lemon myrtle leaves. Steep (soak) 3-5 minutes.
Remove the leaves.
Cool the cordial then pour into a perfectly clean bottle and store in the fridge.
Dilute to taste with iced water and serve with a fresh lemon myrtle leaf tip.

I use lemon myrtle a lot, so have plenty of recipes. I will put one into my next enewsletter for a dressing and a cheesecake slice. Also try them in stewed apples, curries, cordials and syrups or put some leaves into a bottle of vodka for lemon myrtle vodka drinks. Check my facebook page from time to time for ideas too.
